Making Quinoa with Tasha

Quinoa is as easy to make as rice and high in protein. Please view this qunioa demo to see just how easy it is to make a healthy salad choice using this amazing seed.

Recipe

Tabbouleh-style Quinoa Salad
2 cups of water (salted)
1 cup quinoa
1 bunch of finely chopped mint
1 small bunch of Italian parsley, chopped (optional)
1/4 cup of chopped celery
1/4 cup Parmesean cheese, freshly grated
1/2 cup grape tomatoes, cut in slices
1/4 cup fresh lemon juice
1 Tablespoon red wine vinegar
2 Tablespoons olive oil
1/2 tsp salt
Pepper to taste
CHILL and SERVE!

Bring the water and quinoa to a boil, then cover and reduce to a simmer for 10-13 minutes, until the water is absorbed. Let the quinoa cool. Add the mint, parsley (optional), celery, cheese, tomatoes and mix and finish by adding the lemon juice, red wine vinegar and olive oil. Then season with salt and peper and chill before serving.

    Tasha: thanks so much for the yummy recipe idea and for the great demo! I love Quinoa and am always looking for new ways to jazz it up a little. Sounds like a perfect summer salad.
