“Pièce Montée” sweet treat for future chef, Isabelle Fougoux!


Though a pièce montée is typically made in a formal centerpiece (cone shape dessert for weddings), an alternatives is to make the cream puffs using pâte à choux filled with crème pâtissière (pastry cream)  and then attaching them together with caramel and decorating with spun sugar. Write a message with icing or white chocolate on nougatine (made with caramel and sliced almonds).
