Les Spéculoos (a Dutch tradition) is served at cafes and restaurants with coffee at many restaurants in the South of France. This crunchy cinnamon & spicy shortbread biscuit is reminiscent of ginger snaps but has a much more distinctive taste. Some restaurants use chopped Spéculoos to make the crust for cheese cake, which is absolutely divine. Traditionally, Spéculoos is baked for consumption on or just before the Christmas holidays in the Netherlands but in the last few decades it is served all year round throughout Europe.
