I admit, I was trying to impress Denise Vivaldo, who is a chef/caterer and well known food stylist from Los Angeles. I have been fortunate to work with her on many freelance projects and she has become such an influential force! While I have not made “Isles Flottants” other wise known as Floating Islands, I made all the components yesterday: Crème anglaise, baked meringues, brown sugar caramel and toasted almonds. The assembly was easy and I chose large martini glasses to showcase all the layers. The result: Denise and Cindie loved these Isles Flottants!
