A chouquette is a type of viennoiserie consisting of a tiny portion of choux pastry sprinkled with pearl sugar– Using your favorite pâte à choux recipe, form 50 gram balls, brush with egg wash, sprinkle with pearl sugar and bake for 170 degrees C for 25-30 minutes,  until browned and puffed. A favorite treat for all!
